comparing page turning videos -
Codex Sinaiticus and the Archimedes Palimpsest
Codex Sinaiticus - date of production c. AD 1840, amazingly some say 4th century
flexible, youthful, pages turn easy-peasy -
Archimedes Palimpsest - date of production AD 950, no dispute
ancient manuscript is brittle, stiff, pages turn with great caution and difficulty
(video found by cjab, thanks!)

Add the two offered by Jonathan Burke
The fifteenth century choirbook in this video exhibits similar rigidity to Sinaiticus, making the same loud cracking and popping sounds as the pages are turned, but even this fifteenth century codex has more flexible pages than Sinaiticus, with the pages bending visibly under their own weight. The Sinaticus pages act like wooden boards in comparison.
As a greater contrast, see how the page of this old newspaper sags, curls, and flops, even right up close to the edge being handled.
